Ruth’s vanilla Cupcake recipe

Looking for a way to fundraise for the Little Beehive Charity week and have some fun as a Family? Our amazing Kirkcaldy cook Ruth has put together a recipe for 25 (yummy!) cupcakes!

This is a great activity to try at home and at the end, you have some yummy cupcakes to eat and sell!

Why not sell each up cake for £1 (or more!) to friends, family and colleagues.

£25 raised and donated = 100 meals for those in need.

Ruth’s Cupcake Recipe


Ingredients:

250g softened unsalted butter
250 caster sugar
250g self-rising Flour
4 Medium Eggs
4 Tbsp milk

1 Tbsp Vanilla Extract (optional)


Method:

1. Preheat the oven to 180°c.

2. Put cupcake cases into your cupcake trays.
3.Cream the butter and sugar together in a maxing bowl. Mix until soft and fluffy.
4. Add in the flour, eggs, vanilla and milk, whisk until smooth.

5. Divide mixture between 25 cupcake cases evenly.

6. Bake your 25 cupcakes in the oven for 12-15 minutes until cooked through.

7. Leave to cool.

8. Once cooled, ice and decorate!

Glace icing

Ingredients:
250g Icing sugar
30ml water
Yellow Food Colouring
Blue Food Colouring


Method:
1. Mix the icing sugar and water together until thick enough to coat the back of a spoon.
2.Add in drops of your yellow food colouring into the batch – add drops slowly and mix well until desired colour is met.
4. (Optional) add drops of water until desired texture is met.
